Planning a New Restaurant? Why Acoustics Should Be Part of the Design The Noise Problem That Did Not Have to
Some of the best restaurants in the Southeast operate in buildings that are as much a part of the dining experience as the food. A converted 19th-century warehouse in Savannah’s historic district. A Civil War-era commercial building in downtown Charleston. A Beaufort antebellum structure that has been a gathering place for generations.
These spaces carry irreplaceable character. The exposed brick, the heart pine floors, the 14-foot plaster ceilings, the original windows, and the proportions that modern construction cannot replicate are what make dining in them feel different from eating in a new build.
They are also, almost without exception, acoustically punishing environments.
The challenge for restaurant owners in historic buildings is not whether acoustic treatment is needed. It almost always is. The challenge is how to deliver enough treatment to meaningfully reduce noise without touching the architectural elements that define the space.
Historic commercial buildings were not designed with restaurant acoustics in mind. They were designed for warehousing, retail, manufacturing, or civic purposes that had entirely different requirements. The acoustic properties that make them problematic for dining are byproducts of how they were built, not design failures.
Hard, highly reflective surfaces are the norm. Plaster walls, brick, stone, hardwood or heart pine floors, and original wood ceilings are beautiful and acoustically reflective. They produce long reverberation times and pronounced echo from the high ceilings and hard wall surfaces.
Ceiling height is typically significant. Many historic commercial buildings in the Southeast have ceiling heights of 12 to 18 feet or more. High ceilings create long reverberation paths and give sound more time and distance to accumulate before reaching an absorptive surface.
Open floor plans with minimal interior partitions are common. The large, undivided spaces that make these buildings feel grand also allow sound to travel freely across the entire footprint of the room.
Windows are often original or historically accurate replacements. Single-pane original glass provides minimal acoustic isolation from street noise and has no absorptive value.
The combination of all these elements produces rooms that can have RT60 values well above 2.0 seconds in their untreated state, generating dining environments that would be considered acoustically problematic even before accounting for the noise produced by guests, music, and kitchen activity.
In buildings with historic designation, local landmark status, or inclusion in a historic district, alterations to the building fabric are regulated. The specific rules vary by designation and jurisdiction, but the general principle is that changes visible from the exterior and significant alterations to character-defining interior features require review and approval.
For acoustic treatment, this creates real constraints. Permanently attaching heavy acoustic panels to plaster walls, covering original brick with absorptive material, or dropping a new ceiling below the original to conceal acoustic treatment may not be permitted without approval, and approval may not be granted for interventions that significantly alter the character of the space.
Even in buildings without formal historic designation, restaurant owners who have invested in preserving and showcasing the original architecture have a strong practical interest in keeping that architecture visible and intact. The acoustic solution cannot undo the investment that makes the space valuable.
This means that the standard toolkit for restaurant acoustic treatment needs to be applied selectively and creatively in historic buildings. Products and methods that work well in new construction or unrestricted commercial spaces may not be appropriate here.
Ceiling-Suspended Systems
Suspending acoustic treatment from the ceiling rather than mounting it to walls or surfaces is one of the most effective strategies in historic buildings. Hanging baffles, ceiling clouds, and suspended panel arrays can be installed using rigging points that do not permanently alter the wall or ceiling surface.
In a high-ceiling historic space, suspended systems can be positioned at an acoustically effective height below the original ceiling, targeting the first point of reflection without covering or modifying the ceiling itself. The original ceiling remains visible above the suspended elements.
The visual design of suspended systems in these spaces matters. In an industrial warehouse conversion, dark metal baffles can look intentional and even add to the character of the space. In a more refined historic interior, custom fabric clouds or wood panel arrays can be designed to complement the architecture rather than conflict with it.
Freestanding and Furniture-Integrated Acoustic Elements
Acoustic absorption can be integrated into the furniture and fixtures of the dining room rather than mounted to the building itself. Upholstered banquette seating, fabric-backed booth dividers, upholstered headboards or wall panels that function as furniture rather than building modifications, and acoustic room dividers all contribute absorptive surface area without touching the historic fabric.
The cumulative effect of properly specified soft furnishings is often underestimated. A dining room with upholstered seating throughout, fabric window treatments, and acoustic elements integrated into the furniture can achieve meaningful reverberation reduction without any panel installation on the walls or ceiling.
Stretch Fabric Systems in Non-Character Areas
In historic buildings where some walls are not character-defining, such as service corridors, modern infill partitions, or areas that have already been altered, stretch fabric systems can be installed to add significant absorptive surface area without affecting the historic elements of the space.
The approach involves identifying which surfaces in the building are protected and which are not, and concentrating treatment on the unprotected surfaces while using suspended and furniture-integrated approaches for the protected areas.
Acoustic Window Treatments
Original single-pane windows in historic buildings are a significant source of both sound transmission from outside and surface reflection within the room. Heavy acoustic curtains, when appropriate to the aesthetic of the space, add absorptive area and reduce both incoming noise and interior reflection from the window wall.
This approach is more viable in some spaces than others. A casual dining concept in a converted warehouse can accommodate heavy curtains in a way that a fine dining restaurant in an antebellum building may not.
There are acoustic problems in historic buildings that cannot be addressed without construction-level intervention, and it is important for restaurant owners to understand what is and is not achievable with surface treatment alone.
Transmission of sound between the restaurant and adjacent spaces, through a shared wall with a neighboring business or through the floor to a space below, requires decoupling the structural connection between spaces. Surface-mounted acoustic panels do not solve transmission problems. Addressing them in a historic building typically requires working within the preservation constraints to add mass and decoupling to shared walls and floor-ceiling assemblies, which is a more complex and expensive undertaking than standard acoustic treatment.
Very long reverberation times in very large historic spaces may require more absorptive surface area than can be achieved through suspended systems and furniture alone. In these cases, the practical target for treatment may be a meaningful improvement rather than an ideal RT60, and the owner should understand that in advance.
